Meet The Chef

Chef David

David is a Miami-born, Medellín-raised chef and the Executive Chef and Owner of David’s Restaurant & Lounge. With over 15 years of experience, David has drawn on his Colombian heritage and South American flavors to create beautiful fusion dishes in every city he’s worked in. His signature dishes are known for their bold, sweet, and sour flavors, rich textures, and vibrant colors

One of David’s favorite dishes to prepare is his famous Grilled Octopus, topped with homemade chimichurri and served with sweet plantain bacon cheese croquettes and chorizo chipotle crema, finished with compressed cucumber and passion fruit gel. This dish took years to perfect as David experimented with various elements, sauces, and textures, ultimately combining the flavors he grew up with, such as sweet plantain, chorizo, passion fruit, and chimichurri. The result is a guest favorite at David’s Restaurant.
